Aww! I have a question for you that might make a good article. I was recently hit with the inspiration to travel to Poland--I've never been. This has quickly become a longing, but I have many questions. What tourist spots should I go to? Which airport should I fly into? What hikes should I take? What time of year should I go? Which restaurants are the most authentic? What cultural things should I be aware of? Thanks for your help!

Lauren, what a wonderful idea to travel to Poland! I know your trip will fill your heart with a lifetime of memories. I could write something based on my own experiences, but like everyone, mine will be different than others. Hopefully, it will at least help get you started. Have a beautiful day.

Hi Polish Mama, I was wondering... My Babci Made two different types of borscht or maybe barszcz?, one on Christmas and one on Easter. They were both white. I didn't like the Chistmas one, I believe it was flour based, dried mushrooms, etc... close to your mushroom soup. I love the Easter one though, and make it every year, but it is not listed here, and I am wondering if it is an actual Polish dish or maybe something she came up with, She was pretty good at that. It involves soaking oatmeal in cold water, then straining the oats out, add salt pork, garlic, and lemon, then simmering until it thickens. She did variate it so you didn't have to use salt pork, by using a couple tablespoons oil and salt, and it still tastes the same. I was also told that usually people would tuck it away for 9 days in a cool dark place to let it ferment, but we never did that, or I don't recall her ever doing that. I don't ferment it. When done we put boiled eggs and kielbasa in it. I never did ask her, I just assumed it was because we always had a traditional Polish feast on the holidays. Thank you for your insight. God Bless.

K Kowal, I'm sorry it took so long to reply, my blog is being heavily spammed and it's taking a while to get through comments because of it. The soup you are referring to is called Zurek or żur. It is absolutely delicious.
